| Step 2 : Indoor withering and tossing |
Put the tea leaves in to oolong tea tossing machine, rotate about 3-4 minutes, and put the leaves on the sieve, move the wither racks indoors, keep indoor temperature 20℃, relative humidity 80%, indoor withering time 1.5-2 hours.
After the end of time, put the leaves in the tea tossing machine again, rotate about 5-10 minutes, and move them indoors, indoor withering time 2-2.5 hours.
After the end of time, put the leaves in the tea tossing machine again, rotate about 20-25 minutes, and move them indoors, indoor withering time 6-12 hours.
After indoor withering and tossing, the tea leaves water content drop to about 62%, the weight of tea leaves about 84kg.
