Why Green Tea Need Fixation?

Green tea needs fixation to prevent oxidation, which is the process that turns tea leaves brown and gives black tea its distinctive flavor. By applying heat to the tea leaves, the enzymes responsible for oxidation are deactivated, preserving the green color and fresh, vegetal flavor of green tea.  

Here are the specific reasons why fixation is crucial for green tea:
