Using Frying Pot For Hand Made Green Tea

Generally speaking, the temperature of the buds and leaves in the green tea frying pot is 75~115℃ for the fresh leaves of grade 1~7, and 140~180℃ for the raw materials of 8~10 fresh leaves (rough old tea); The temperature of high- and medium-grade tea is controlled at 50~65℃. If the temperature is too high, the color of the finished tea will turn yellow, and even burn spots will appear, resulting in a burnt smell; if the temperature is too low, the color of the finished tea will be dark, the soup will darken, the taste will not be fresh, and the aroma will be poor. Therefore, when frying Longjing tea, whether it is a green pot or a Hui pot, you must flexibly control the heat according to the size and tenderness of the raw materials and the amount of water loss in the fresh leaves during the frying process.
