Generally speaking, the temperature of the buds and leaves in the green tea frying pot is 75~115℃ for the fresh leaves of grade 1~7, and 140~180℃ for the raw materials of 8~10 fresh leaves (rough old tea); The temperature of high- and medium-grade tea is controlled at 50~65℃. If the temperature is too high, the color of the finished tea will turn yellow, and even burn spots will appear, resulting in a burnt smell; if the temperature is too low, the color of the finished tea will be dark, the soup will darken, the taste will not be fresh, and the aroma will be poor.
