2. Mastery of high temperature fixtation technology

Among them, destroying enzyme activity is the most important. To work with the DL-6CST series of curing machines, it is necessary to adjust the amount of tea and the temperature in the processing according to the moisture content of the tea, the new and old conditions.
The heat energy of the increase of leaf temperature comes from the transfer and radiation of the hot pot. The increase or decrease of the amount of leaves to adjust the leaf temperature must be based on a certain pot temperature; if the pot temperature is not high, extending the curing temperature can only achieve the purpose of evaporating water, but cannot increase it. The leaf temperature can destroy the enzyme activity and keep the leaf color emerald green.
At the same time, the curing temperature should be appropriately lower on the premise that the fresh leaves do not produce red stalks and red leaves, which is conducive to the change of the chemical composition of green tea. In the late stage of the fixation, when the enzyme activity has been destroyed, the pot temperature should be appropriately lowered, otherwise it will inevitably lead to excessive leaf temperature and scorching of buds and leaves.
