When making Pu-erh tea, tea fixing is the most familiar to everyone, and it is also one of the most critical factors that form the quality of Pu-erh tea.

The exact meaning of "fixation" refers to destroying the tissue of fresh tea leaves, so that the substances in the fresh leaves are rapidly transformed under high temperature conditions to form the unique quality and flavor basis of various teas.

Therefore, the tea fixation temperure is particularly important. The tea fixation temperature of Pu-erh tea has its own specific requirements.

First of all, it should be made clear that the "fixation temperature" refers to the temperature value that the leaf temperature of fresh leaves should reach when making a certain type of tea, not the temperature of the pot or the temperature of fresh leaves entering and leaving the tea fixation pot.

Because before the fresh leaves are put into the pot, the pot temperature has actually exceeded 280°C; when the fresh leaves are put into the pot and out of the tea fixation pot, the leaf temperature is often lower, below 60°C or lower than 50°C.

If you don't understand the exact meaning of "fixing temperature", it is easy to form two extremes of misunderstanding. One is that the tea fixation temperature of Pu'er tea is above 280℃, and the other is that the tea fixation temperature of Pu'er tea is below 60℃.
